That is a mid-table rank — not a top trigger — but a handful of dried halves is a different load from one or two fresh apricots.
Sorbitol is the main pathway. It is a polyol (a FODMAP) found in many fruits, including stone fruit such as peach. In HPLC analyses of common fruit, sorbitol showed up in 15 fruits, at about 0.5–6 g per 100 g of fresh weight.[1] Drying removes water, so the same polyol sits in a much smaller piece. A bag of dried apricots is an easy way to eat several fruits’ worth of sorbitol in a few minutes.
