Why celery can cause gas

Wind is mostly swallowed air plus gases from bacterial fermentation of leftover carbohydrate in the colon. Even on a fibre-free liquid diet, healthy volunteers still produce a baseline amount of flatus; adding complex plant carbohydrate raises that volume as fermentation kicks in.[1]

Mannitol is the main FODMAP in celery. HPLC analyses of common vegetables measured sorbitol and/or mannitol in 18 vegetables. Sugar alcohols are often incompletely absorbed in the small intestine, so they reach the colon, draw in water, and are fermented — hydrogen and other gases that you pass as wind.[2]

In a challenge study, 10 g of mannitol (or sorbitol) raised gut symptoms in people with IBS. Healthy volunteers produced hydrogen too, but they reported fewer symptoms. Ten grams is a research dose — more than a couple of sticks — but it shows why a large raw bunch or a juice can be windy, especially if your gut is sensitive.[3]

Lowering overall FODMAP intake has been shown to reduce flatulence in people with IBS.[4]

Fibre and strings add to the load. Celery is fibrous. A sudden large raw snack after a low-vegetable week means more leftover plant carbohydrate in one sitting.[1] Crunchy eating also makes it easy to gulp air.

What sits on the celery matters. Peanut butter, cream cheese, ranch, hummus, or onion in a dip add fat and extra FODMAPs. Celery in a mixed salad is not the same as a couple of raw sticks on their own.[4]
